Legume-friendly Dish with Lentils, Red Beans, Beets and Greens
The Basics

Ingredients
1/2 cup diced broccoli leaves
1/2 cup diced collard greens
1/2 cup diced golden beets
1/2 cup red beans (soaked, rinsed and drained)
1/4 cup red lentils
1/2 cup long grain brown rice
1 tablespoon miso paste
1 tablespoon coconut oil
1 tablespoon olive oil
1 tablespoon turmeric
1/4 tablespoon cracked black pepper
1/4 teaspoon cumin
1/2 teaspoon cayenne pepper
2 cups natural spring water
1/4 teaspoon sea salt
Instructions
- Place the broccoli leaves, collard greens, beets, miso paste, coconut oil, olive oil, turmeric, black pepper, cumin and cayenne pepper into pot with a few drops of water; set heat to medium and cook down for about 10-12 minutes (stirring regularly)
- Add lentils, red beans, rice and the rest of the water to the pot, stir all around evenly and continue to cook the ingredients down for another 10-12 minutes/until the mixture comes to a boil (stirring regularly)
- Once mixture reaches a boil, close the lid for the pot, set the heat to low-simmer and leave pot closed for at least 20 minutes
- Open pot, stir ingredients around evenly and test a red bean or two for readiness (the red beans should become soft and a bit mushy when bitten). If beans need more time to cook, close the lid down again for another ~10 or so minutes. Otherwise, proceed to step #5 if ready.
- Once beans are ready, turn heat off and serve with a sprinkle of sea salt on top.
